- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3/4 cup raspberry jam
- 1/4 cup powdered sugar for dusting
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the egg yolks, vanilla extract, cinnamon, and salt, mixing until combined.
- Gradually add the flour, mixing until a dough forms.
- Roll out half of the dough to about 1/8-inch thickness and place it on a lined baking sheet.
- Spread the raspberry jam evenly over the dough.
- Roll out the remaining dough, cut into strips, and place them over the jam in a lattice pattern.
- Bake in the preheated oven for 15-20 minutes, or until golden brown.
- Once cooled, dust with powdered sugar before serving.
Notes
- For a more intense flavor, try adding some lemon zest to the dough.
- These cookies can be stored in an airtight container for up to a week.
